Green lentils simmered with potatoes, carrots, peppers and smoked paprika into a thick, comforting stew.
Ingredients
Serves 4.
- 1 yellow onion, finely chopped
- 7 oz carrots, diced
- 1 bell pepper, green, diced
- 3 garlic cloves, finely chopped
- 2 tomatoes, coarsely grated, skin discarded
- 1½ cups dried brown or green lentils, rinsed
- 11 oz russet potatoes, cut into 1.5 cm cubes
- 4 oz baby spinach
- 3 tbsp olive oil
- 2 tsp smoked paprika
- 2 bay leaves
- 1 vegetable bouillon cube, check the label if cooking gluten-free
- 2 tsp apple cider vinegar
- salt, to taste
- black pepper, to taste
Contains: celery. Check the label: wheat (gluten), milk, soy, sulfites. Always read the labels if you cook for someone with an allergy.
Method
- Heat 2 tablespoons of the olive oil in a large saucepan on medium heat and cook the yellow onion, carrots and bell peppers for 3 minutes. Add the garlic, tomato and smoked paprika and stir for 1 minute, without letting the paprika burn.
- Add the lentils, potatoes, bay leaves, the crumbled bouillon cube and 5 cups (1200 ml) of boiling water. Simmer, partly covered, for 20 minutes, stirring now and then, until the lentils and potatoes are tender; add a splash more water if it gets too thick.
- Stir in the spinach until wilted, then add the apple cider vinegar and the rest of the oil. Season with salt and black pepper, take out the bay leaves and serve in bowls.
Leftovers: Keeps in the fridge for 4 days or the freezer for 3 months; reheat until piping hot, adding a splash of water as it thickens.
