Ingredients

Serves 4.

  • 11 oz dried pasta (penne, rotini or spaghetti), short shapes
  • 3 (5 oz) cans tuna, drained
  • 1½ cups frozen corn
  • 2½ cups whole milk
  • 3 tbsp butter
  • 1 cup cheddar cheese, grated
  • ½ bunch green onions, sliced (optional)
  • 4 tbsp all-purpose flour
  • 1 tsp Dijon mustard
  • salt, to taste
  • black pepper, to taste

Contains: wheat (gluten), milk, fish, mustard, sulfites. Check the label: egg, soy. Always read the labels if you cook for someone with an allergy.

Method

  1. Heat the oven to 400°F. Cook the pasta in salted boiling water for 2 minutes less than the packet says, adding the corn for the last minute. Drain.
  2. Melt the butter in a large pot on medium heat, stir in the all-purpose flour and cook for 1 minute. Gradually whisk in the whole milk and stir for 4–5 minutes until smooth and thickened.
  3. Take off the heat and stir in two-thirds of the cheddar, the Dijon mustard, salt and black pepper.
  4. Fold in the pasta and corn, the flaked tuna and the green onions if using. Tip into a baking dish and scatter over the rest of the cheese.
  5. Bake for 15–20 minutes until golden and bubbling.

Leftovers: Fridge 2 days; reheat with a splash of milk until piping hot.
