Long-grain rice simmered in one pan with peppers, celery, kidney beans, tomatoes and mild Creole-style spices.

Ingredients

Serves 4.

  • 1 yellow onion, chopped
  • 1½ bell peppers, green and red, diced
  • 5 oz celery, diced
  • 3 garlic cloves, finely chopped
  • 1½ cups long-grain white rice
  • 1 (14.5 oz) can diced tomatoes
  • 2 (15 oz) cans kidney beans, drained and rinsed
  • ¼ bunch green onions, thinly sliced
  • 2 tbsp olive oil
  • 1½ tsp smoked paprika
  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • 1 vegetable bouillon cube, check the label if cooking gluten-free
  • salt, to taste
  • black pepper, to taste
  • 2 tsp hot sauce, for adults (optional)

Contains: celery. Check the label: wheat (gluten), milk, soy, sulfites. Optional extras contain mustard. Always read the labels if you cook for someone with an allergy.

Method

  1. Heat the olive oil in a large, deep frying pan or casserole with a lid on medium heat and cook the yellow onion, bell peppers and celery for 3 minutes until starting to soften. Add the garlic, smoked paprika, dried thyme and dried oregano and stir for 1 minute.
  2. Stir in the rinsed rice, the tomatoes, kidney beans, the crumbled bouillon cube and 2 cups (480 ml) of water. Bring to the boil, cover and cook on the lowest heat for 15 minutes, until the water is absorbed and the grains are tender (if not, cover and cook 2–3 minutes more). Leave covered off the heat for 5 minutes.
  3. Fluff with a fork, season with salt and black pepper and scatter with the green onions. Serve with the hot sauce for adults, if using.
Tip: Onion, pepper and celery are the Creole 'holy trinity'; chop them small so they soften in the short frying time.

Leftovers: Cool leftover rice within 1 hour, keep it in the fridge for no more than 1 day and reheat it only once, until steaming hot.
