Piyaz (Turkish White Bean Salad) with Eggs and Warm Pittas
Monday · 20 min · about £1.12 per serving in ingredients used

Piyaz (Turkish White Bean Salad) with Eggs and Warm Pittas

Cannellini beans with softened red onion, tomato and parsley in a lemony dressing, topped with boiled eggs.

Prep 8 min · Cook 12 min · Serves 2 · Amounts are scaled for your household.

VegetarianDairy-free (check labels)

Ingredients

  • 1 × 400 g tin cannellini beans, drained and rinsed
  • 2 eggs
  • ½ red onion, halved and thinly sliced
  • ½ tomato, diced
  • ¼ bunch parsley, chopped
  • ½ lemon
  • 2 pitta breads
  • 2 tbsp olive oil
  • 1½ tsp cider or white wine vinegar
  • salt, to taste
  • black pepper, to taste

Contains: gluten, egg. Check the label: milk, soya, sesame, sulphites. Always read the labels if you cook for someone with an allergy.

Method

  1. Lower the eggs into a small saucepan of just-boiled water from the kettle and simmer for 9 minutes until the yolks are firm, then cool in cold water, peel and cut into quarters.
  2. Meanwhile, toss the red onion with a good pinch of salt and rub it with your fingers for 30 seconds. Rinse under cold water and drain well; this takes the harsh edge off the onion.
  3. Whisk the olive oil, cider or white wine vinegar and the juice of the lemon in a large bowl with a pinch of salt and plenty of black pepper.
  4. Add the beans, onion, tomato and most of the parsley and fold gently so the beans stay whole. Taste and add more salt or lemon if needed.
  5. Warm the pitta bread in a dry frying pan or a toaster for 1–2 minutes. Pile the salad onto plates, top with the eggs and the rest of the parsley, and serve with the warm bread.
Tip: The salad improves after an hour in the fridge as the beans soak up the dressing; add the eggs just before serving.

Leftovers: The salad keeps in the fridge for 2 days; keep the boiled eggs separately, for up to 2 days.

Italian Eggs in Tomato Sauce with Spinach and Soft Polenta
Tuesday · 20 min · about £1.09 per serving in ingredients used

Italian Eggs in Tomato Sauce with Spinach and Soft Polenta

Eggs gently cooked in a garlicky tomato and basil sauce with spinach, spooned over soft olive-oil polenta.

Prep 3 min · Cook 17 min · Serves 2 · Amounts are scaled for your household.

VegetarianGluten-freeDairy-freeKid-friendly

Ingredients

  • 2 garlic cloves, thinly sliced
  • 250 g passata
  • 100 g quick-cook polenta
  • 75 g frozen spinach
  • ¼ basil (pack)
  • 4 eggs
  • 1½ tbsp olive oil
  • ¼ tsp sugar
  • salt, to taste
  • black pepper, to taste

Contains: egg. Always read the labels if you cook for someone with an allergy.

Method

  1. Put the kettle on. Heat 1 tablespoon of the olive oil in a large, deep frying pan with a lid on medium heat and cook the garlic for 1 minute until pale golden. Add the passata, sugar, 1½ tablespoons of water, a pinch of salt and black pepper and simmer for 5 minutes, until slightly thickened.
  2. Meanwhile, pour 475 ml of just-boiled water into a saucepan, add a pinch of salt and bring back to the boil. Pour in the quick-cook polenta in a thin stream, whisking all the time, then cook on low heat for 5 minutes, stirring often, until thick and smooth. Stir in the rest of the oil, cover and keep warm.
  3. Stir the frozen spinach into the sauce and simmer for 2–3 minutes, until it has thawed and the sauce is steaming hot again, then stir in most of the basil leaves. Make 8 hollows with a spoon and crack the eggs into them, one in each.
  4. Cover and cook on low heat for 6–8 minutes, until the whites are completely set and the yolks are done the way you like them. For young children and anyone pregnant, cook until the yolks are firm.
  5. Spoon the polenta into shallow bowls, top with the eggs and sauce and scatter with the rest of the basil.
Tip: If the polenta thickens too much while it waits, loosen it with a splash of hot water and stir well.

Leftovers: Best eaten straight away; leftover sauce without the eggs keeps in the fridge for 2 days.
