Ingredients
- 65 g flat rice noodles
- 2 eggs
- 65 g white cabbage, shredded
- 40 g carrots, cut into matchsticks
- ½ tomato, cut into wedges
- ¼ onion, sliced
- 1 garlic clove, finely chopped
- ¼ bunch spring onions, cut into short lengths
- 2½ tsp soy sauce
- ½ tsp sugar
- 2½ tsp vegetable oil
- black pepper, to taste
Contains: egg, soya. Check the label: gluten. Always read the labels if you cook for someone with an allergy.
Method
- Soak the rice noodles in a large bowl of just-boiled water for 6–8 minutes until soft but still a little firm. Drain, rinse with cold water, toss with 1 teaspoon of the vegetable oil and snip into shorter lengths with scissors.
- Mix the soy sauce, sugar and 2½ teaspoons of water. Beat the eggs.
- Heat 1 teaspoon of the oil in a wok or large frying pan on high heat, pour in the eggs and scramble for 1–2 minutes until just set. Lift onto a plate.
- Add the rest of the oil with the onion and garlic and stir-fry for 1 minute, then add the white cabbage and carrots and stir-fry for 3 minutes until wilted but still crisp. Add the tomato for 1 minute.
- Add the noodles and the sauce and toss for 2 minutes until the noodles have soaked it up. Return the eggs with the spring onions and a good grind of black pepper and toss to mix.
Tip: Rinse the soaked noodles well in cold water; it washes off the surface starch so they don't clump in the wok.
Leftovers: Keeps in the fridge for 1 day; reheat in a hot pan with a splash of water until piping hot.

VegetarianGluten-free (check labels)Dairy-freeKid-friendly
Ingredients
- 75 g long-grain rice
- 2 eggs
- 1½ tomatoes, cut into wedges
- 75 g white cabbage, finely shredded
- 1 garlic clove, thinly sliced
- ¼ bunch spring onions, sliced
- 1½ tsp tomato ketchup
- ½ tsp sugar
- ½ tsp soy sauce
- ¼ tsp cornflour
- ¼ tsp toasted sesame oil
- 1 tbsp vegetable oil
- salt, to taste
Contains: egg, soya, sesame. Check the label: gluten, celery. Always read the labels if you cook for someone with an allergy.
Method
- Rinse the rice and put it in a saucepan with 150 ml of water. Bring to the boil, cover and cook on the lowest heat for 15 minutes, until the water is absorbed and the grains are tender (if not, cover and cook 2–3 minutes more). Leave covered off the heat for 5 minutes.
- Beat the eggs with a pinch of salt and the toasted sesame oil. In a cup, mix the tomato ketchup, sugar, soy sauce and cornflour with 25 ml of water.
- Heat 1 teaspoon of the vegetable oil in a wok or large frying pan on high heat and stir-fry the white cabbage with a third of the garlic for 3–4 minutes, until wilted and catching at the edges. Season with salt and tip into a dish.
- Add 1½ teaspoons of oil to the pan on medium-high heat, pour in the eggs and stir gently for 1–2 minutes, until softly scrambled and just set. Tip onto a plate.
- Add the last tablespoon of oil and the rest of the garlic, then the tomato, and cook for 3–4 minutes, until the tomatoes soften and release their juice. Stir the sauce, pour it in and bubble for 1 minute, until glossy.
- Return the eggs with the spring onions and fold together for 30 seconds. Serve with the rice and the cabbage.
Tip: Use the ripest tomatoes you can find; with pale winter tomatoes, add an extra tablespoon of ketchup.
Leftovers: Best eaten straight away. Cool leftover rice within 1 hour, keep it in the fridge for no more than 1 day and reheat it only once, until steaming hot.

- 100 g white cabbage, very finely shredded
- 25 g carrots, coarsely grated
- ¼ bunch spring onions, thinly sliced
- 1 egg
- 10 g mayonnaise
- 4 tbsp plain flour
- 1½ tsp vegetable oil
