Ingredients
- 1 (15 oz) can chickpeas, drained and rinsed
- ¾ cup frozen corn
- 1 tomato, finely diced
- ¼ red onion, finely chopped
- ¼ bunch cilantro, chopped
- 1 lime
- 1 avocado
- 4 flour tortillas (8-inch)
- 1 tbsp olive oil
- ½ tsp chili powder (mild blend)
- ½ tsp ground cumin
- ¼ tsp garlic powder
- salt, to taste
Contains: wheat (gluten). Check the label: soy, sulfites. Always read the labels if you cook for someone with an allergy.
Method
- Heat the air fryer to 400°F. Pat the chickpeas as dry as you can with absorbent paper, then toss with the olive oil, chili powder, ground cumin, garlic powder and a pinch of salt.
- Spread the chickpeas in an even layer in the basket and air-fry for 12–14 minutes, shaking the basket every 4 minutes, until crisp outside and tender inside.
- Meanwhile, put the corn in a microwave-safe bowl with 1½ teaspoons of water, cover and microwave for 3 minutes, stirring halfway, until steaming hot. Drain and mix with the tomato, red onion, half the cilantro, the juice of 1 lime and a pinch of salt.
- Mash the avocado with the juice of the second lime and a pinch of salt. Warm the tortillas stack in the microwave for 30–40 seconds, wrapped in a clean damp tea towel.
- Toss the hot chickpeas with the rest of the cilantro. Spread each tortilla with avocado, top with the chickpeas and the salsa, fold and serve.
No air fryer? Roast the chickpeas on a large baking tray at 425°F for 20–25 minutes, shaking halfway, until crisp.
Leftovers: Best eaten fresh, as the chickpeas soften; the salsa keeps in the fridge for 1 day.

- ¾ cup frozen peas
- ½ red onion
- 1½ tomatoes
- 1 tbsp fresh ginger, finely grated
- ¼ bunch cilantro, chopped
- ½ cucumber
- ½ lemon
- ¼ tsp ground turmeric

Method
- For the kachumber, dice the cucumber, 2 of the tomato and half the red onion, and toss with the juice of half the lemon, a pinch of salt and half the cilantro.

- Heat 1½ teaspoons of the vegetable oil in a large non-stick frying pan on medium heat. Pour in half the egg mixture and cook for 2 minutes, drawing the edges into the middle with a spatula, then cover with a lid and cook for 3–4 minutes more, until set all the way through and golden underneath. Fold in half, slide onto a plate and keep warm. Cook the second omelette in the rest of the oil.
- Cut each omelette in half and serve with the kachumber and the rest of the lemon in wedges.
Tip: Covering the pan cooks the top of the omelette through without having to flip it.

Sheet-Pan Smoky Sweet Potato and Black Bean Bowls with Lime Slaw
Roasted sweet potato, black beans, corn and peppers in a smoky tomato glaze, topped with a crunchy lime slaw.
Prep 17 min · Cook 26 min · Serves 2 · Amounts are scaled for your household.
VegetarianGluten-freeDairy-freeKid-friendly
Ingredients
- 14 oz sweet potatoes, peeled and cut into small cubes
- 1 (15 oz) can black beans, drained and rinsed
- ¾ cup frozen corn
- ½ bell pepper, chopped
- ¼ red onion, cut into wedges
- 4 oz green cabbage, finely shredded
- ½ lime
- ½ tsp smoked paprika
- ¼ tsp garlic powder
- ¼ tsp dried oregano
- 1 tbsp ketchup
- 1½ tsp brown sugar
- 2 tsp apple cider vinegar
- 1½ tbsp vegetable oil
- salt, to taste
- black pepper, to taste
Check the label: celery, sulfites. Always read the labels if you cook for someone with an allergy.
Method
- Heat the oven to 425°F. Toss the sweet potatoes with 1 tablespoon of the vegetable oil, the smoked paprika, garlic powder, dried oregano and a pinch of salt. Spread over two large baking trays and roast for 12 minutes.
- Meanwhile, mix the ketchup, brown sugar and 1 teaspoon of the apple cider vinegar for the glaze. Toss the green cabbage with the juice of the lime, the rest of the oil, the rest of the vinegar and a pinch of salt.
- Add the black beans, corn, bell peppers and red onion to the trays, drizzle with the glaze and toss. Roast for 10 minutes more, swapping the trays between shelves halfway, until the sweet potato is tender and caramelised at the edges and the corn is steaming hot.
- Spoon into bowls, top with the lime slaw and season with black pepper.
Tip: Cut the sweet potato into small, even cubes, no bigger than a dice, and use two trays; crowded vegetables steam instead of roasting.
Leftovers: The roasted vegetables and beans keep in the fridge for 3 days; reheat until piping hot. Make the slaw fresh.
